Vegan protein pancakes or oatmeal banana pancakes are packed with goodness and gives great texture of banana + oats. It is a good gluten-free breakfast option 😊
Vegan protein pancakes Ingredients-
Oatmeal -1 cup (ground to a powder)
Ripe banana -1 mashed
Buttermilk -1 glass (as per requirement)
Brown sugar -1tbsp
Wheat flour -1tbsp (optional)
Flax seeds powder -2tbsp
Cinnamon powder- 1/2tsp
In a bowl take oats powder and add all the other ingredients (excluding buttermilk and oil) to it. Mix well.
(For gluten-free pancake, do not add wheat flour)
Gradually add the buttermilk and make a paste. Let it sit for 5 minutes, the oats will absorb the moisture and batter will become thick. If required, add more buttermilk to make it a thick flowing batter.
Grease a non-stick tawa and pour the batter to make small pancakes. Cook it on medium flame.
Flip and cook on both sides. Serve hot with honey and fresh fruit.
